In order to evaluate the effect of rice bran storage (AA) on the evolution of acidity and oxidative rancidity of lipids and its consequences on the behavior of fattening pigs, a study was carried out with three consecutive experiments, where Two isoprotein diets were studied ad libitum: a control feed (TI) without AA; and a feed with 60% A.A. (T2). In each experiment the storage time of AA was varied: 39, 86 and 139 days average (experiments 1, 2 and 3 respectively), in which 8 hybrid pigs (Large White x Duroc) were used from 65 to 115 kg . of live weight, randomly distributed in the two treatments (4 animals / treatment), in an experimental design of random plots. Individual control was carried out for the following variables: daily weight gain (G.P.D.), average daily consumption (C.D.P.) and conversion index (I.C.). At the same time, periodic chemical analyzes were carried out on the A.A. and to feed to measure the evolution of Acidity (as% oleic acid) and oxidative rancidity (peroxide index). From the data obtained, it is concluded that A.A. When stored, it gradually increases its percentage of acidity, which becomes more noticeable after 100 days of storage, but does not increase oxidative rancidity. On the other hand, the A.A. with a high level of acidity negatively affects the voluntary consumption of pigs, which is reflected in a slower growth rate, without affecting the conversion index.
